Abu Dhabi ice cream maker sweetens soft serve with dates instead of sugar

Amira Al Dosari starts work at 9 p.m. in the kitchen behind her Abu Dhabi shop Ice Station, spending up to three hours prepping and churning 12 different bases that will become the next day's soft serve flavors. The 53-year-old founder opened the store in 2023 and has developed more than 100 ice cream flavors, many using ingredients from the date palm tree. She now uses kholas rotab, the softest and ripest stage of the kholas date variety, to sweeten her ice cream naturally without adding any sugar. The date palm is a symbol of the UAE, which ranks in the top 10 date producers globally.
Children and other customers can eat dessert without the high sugar content that concerns health experts.
