Masala y Maíz Expands Pay What You Can Model to Restaurants Worldwide
Masala y Maíz, a restaurant in Mexico City, ran a citywide pay what you can initiative in which more than twenty local restaurants served guests without money being a barrier. The team has now created a shared playbook for restaurants globally to adapt the model to their own service style, team capacity, and local realities. The 2026 global day of action invites participating restaurants to open their doors for one day of service that prioritizes access, generosity, and shared responsibility. Each restaurant interprets the model in its own way, creating a moment in which hospitality becomes a tool for connection, dignity, and cultural exchange.
The initiative reimagines restaurants as spaces of care and social connection, not only businesses, by removing financial barriers to dining and creating room for more people at the table.
